Other sites ask you to send them your contract, your passport scan or your photos. This one does the work on your own device instead, so there is nothing to send.
Anyone can promise they delete your files afterwards. You cannot check that promise, and you have no way of knowing who else touched the file in between.
Load the tool and its required processing assets, then turn off your connection and try a synthetic file. Processing can work offline when those assets are cached. A page opening once does not guarantee every processing engine is available offline.
Then open your browser’s developer tools, watch the network panel, and use a tool. The tools do not send requests carrying your selected file contents. Loading the website still involves hosting, advertising and configured measurement connections, described in the privacy policy.
